Cupcake-sized Profits?

When I first heard about cupcake only bakeries, I wondered how they could actually survive.  You don’t make a lot of profit on cupcakes even if you do sell them for $3.00 and rent at some locations is undoubtedly quite expensive.  I assume that shops have to maximize corporate and special event sales because walk-in business simply isn’t sufficient.  Even with that, a single specialty item seems to be a weak basis for an entire business.

Turns out I was right.  The NYT says that “The Latest Entrepreneurial Fantasy Is Selling Cupcakes“.

How long before the local stores add to their repertoire?
